Low carb lunch



People have become more health conscious as a result restaurants and cafes have introduced a line up of healthy meals which are low in carb or made out of an alternative ingredient to make it healthy.

A few alternative ingredients I use-

Brown rice
Whole wheat pasta
Red rice flour
Kurakkan flour

Ideas –
Make buriyani out of brown basmathi rice.
Add a few whole wheat pastas for your salad.
Make pittu using red raw rice flour.
You can make rotti using kurakkan flour.

Recipe for a low carb salad –
1 cup shredded chicken (boiled)
Half a carrot (thinly julienned)
1 cup Shredded cabbage
A handful of peas
Half a tomato chopped
1 teaspoon fresh olive
1 teaspoon olive oil
Salt to taste
Pepper as required
*Use low fat low salt feta cheese and avoid the salt
*lettuce leaf to serve


Mix all ingredients except feta cheese together gently coating with olive oil.
Spread over a large lettuce leaf.
Sprinkle the feta on top and enjoy.

Ideas to make it with 25%carb

1) Add a few croutons.
2) Wrap it on a thin whoke wheat rotti.
3) sandwich it between two slices of multigrain bread.
4) serve with 1/2 a cup of brown rice.


Coriander Rotti

Coming home after a fun filled day of food ,cooking, competitions and food shopping at the international fine food festival, dubai I ended up with a whole bunch of fresh coriander leaves from the posh picnic. Soon after I returned home I put the coriander leaves in a jar of water to keep them fresh.



While I wondered what to do with the leave as I was not a person who cooked indian everyday. Indian cuisine uses coriander leaves mostly and I love indian food. I decided to be a bit inventive and try a coriander rotti.


2 cups flour
1 teaspoon olive oil
Pinch of salt
A handful of coriander leaves
Water as required

Add all the ingredients in to shallow bowl.
Knead with water as required until smooth and soft.
Doesnt matter if the coriander leaves are jotting out just make sure the dough is fine.
Roll small balls and flatten it with a rolling pin.
Cook over a hot griddle on both sides.
Take off heat and wrap it on a tea towel. Serve with any prefered curry whole hot.

Eating out becomes a routine when wife is out of country. when I came down to Sri Lanka on vacation I started worrying about my husbands diet. He is very conscious of what he eats and always prefers a low carb diet. I was introduced to foodonclick through twitter and I decided to try it out. I definitely would recommend this site for anyone.

The next place I recommend is none other than the very famous subway. The salad bowl is delicious with a mix of healthy fresh vegetables and yummy pickles. A prefered choice of meat to go with it is really a go for low carb diet.  Ask for less pickle when you want to avoid those extra saltines which can destroy the taste of fresh vegetables. Subway is available at many locations in dubai and offer delivery service which is just a phone call away.

mantooshe is my favorite place. Of course it’s not low carb but you can still try out some snacks for tea with their very delicious and unique toppings and fillings like spinach and potato. Try calling them and ordering in they do deliver.
