This year I was un dubai during ramadan after two continuous ramadans spent in sri lanka. During the month of ramadan we somehow manage to make something special for ifthar which is also called as breakfast.
Most items we make in sri lanka are fried stuff with a compulsory bowl of porridge especially made only during the month of ramadan with meat or vegetables. I usually have two bowls of the porridge as it’s so tasty.
I make it as follows;
Wash, cut and clean the rice, meat and or carrots, onion, curry leaves and leeks.
Temper the onions with curry leaves and cinnamon.
Add the meat, rice and vegetables.
Stir and season with salt, pepper and turmeric powder.
Pour water and cook till rice and meat is tender.
Add a cup of thick coconut milk and boil for a few minutes stirring continuously.
Take off and serve warm.
Make sure the rice is over cooked as you should not chew the rice you should be able to drink it.
For a better taste use red raw rice and meat with bones which will be a bit messy but the taste is devine.
Incase the rice is not over cooked you can disperse the meat bones and blend the porridge to get a drinkable consistency.
We usually have a few shorteats along with the porridge and most of them are fried stuff like samosa. I also make pizzas and malaysian net crepes which are baked. My mum used to make baked pastries and patties with a prawn filling and it was delicious. I often try making the prawn pastries whenever i feel like eating mums food.
The recipe for the prawn filling is
Boil a potato and mash
Clean, wash and chop onions
Temper the onions in 1 tbsp oil
Add a few chopped curry leaves
Add a cup of cleaned, washed prawns and stir
Stir in the potatoes and season with salt, pepper, chillie powder to taste and a pinch of turmeric powder.
Garnish with a few chopped green chillies and spring onions.
