Serve English breakfast in a can

Here is  small inspiration from me to all my followers

We do love beans, bread and egg for breakfast or you do. Well yea it’s the English breakfast.  Well I don’t fancy beans but if it is served differently I do like to try. Now I decided to get my beans and bread Breakfast fix differently and with all those innovative molecular gastronomy around town in dubai and the restaurants serving food in cute tiny play containers and toy trucks or atleast they look so cute as toys. I decided why not reuse the bean can and serve myself some breakfast in it and make me feel like having at one of those fancy dinning outlets. Oh I sure have tried a few fancy places but not all of them. With the summer at it’s peak I find it tough to travel and experience much. Breakfast time on weekends is always late and it’s tough to drive somewhere and grab something with 2 kids under 3.

So thats a bit of jabbering done.

Ok grab your beans

Warm it.

Slice the bread and toast it.

Make your egg the way you like it.

Wash the bean can and stuff it with the beans.

Place the rest around and enjoy with a fold or spoon or just get messy with your fingers. We ain’t watching.

All that matters is you gotta enjoy it.

Breakfast done.

Oh I’ve got no ham or sausages as we have stopped consuming it much so yes you can add them too.

Maldive fish devilled with eggs

my memories with Maldives fish

I remember the days when I get back home after school and find the maldives fish sambol or the coconut sambol bowl is empty. I and my sister used to to make it and have our lunch. Yes, our lunch was basically just plain rice with a sambol of maldives fish or coconut. It was a time of difficulty. We call it the budget meal.
We used to place the Maldives fish in a motar with some salt, chillie powder and flakes and grind it to a paste by hitting with the pestal. Sometimes we add a few french onions which adds it’s flavor to give a bit of softness.
Lunch was delicious and we enjoyed eating while grinning over a few uncrushed salt crystals sometimes.
We also used to cook the maldives fish with some onions, capsicum and tomatoes which makes it more softer. It’s called devilled maldives fish and served with a hard boiled egg.

Recipe

Ingredients

1 cup maldives fish flakes
1 large onion (chopped)
2 medium sized capsicums
1 medium tomato
A handful of curry leaves
A small piece of cinnamon
1 teaspoon chillie powder
1 teaspoon chillie flakes
A pinch of turmeric
Salt to taste
2 teaspoon oil
2 teaspoon coconut milk

6 hard boiled eggs to serve.

Cooking instructions

1. Head oil in a pan and sauté the onions and curry leaves for a minute or until you get the aroma of curry leaves.

2. Stir in the maldives fish with salt, turmeric powder, chillie powder and chillie flakes.

3. Add the cinnamon stick with a teaspoon of water and mix.

4. Leave the pan closed over a low flame for five minutes.

5. Open and stir letting the contents spread evenly and cook through.

6. Once the water is evaporated and the contents start to dry out pour 2 teaspoons of coconut milk and cook over a high heat stirring continuously.

7. Take of heat when the oil starts to seperate from the curry.

8. Hard boil the eggs and add on top.

tips

* dont like hard boiled eggs? break the eggs on top and leave it for a couple of minutes and take off heat.

* hate eggs at all? Never mind serve it as it is with your favourite curry.

* use this curry as a filling for buns.

* serve this curry with bread, rotti or rice.

*like pickles? At a small piece of pickled lime to this dish and mix while it’s hot.

* dont like too much maldives fish? Sway the quantity of maldives fish with the onions by adding 1 cup of chopped onions for 1 tablespoon of maldives fish.

* are you a vegetarian? Omit maldives fish and add only onions.

* like french onions? Never mind. Buy them and add a handful instead of a large onion for extra taste.
Shallots healthy aren’t they?

* doesn’t seem kid friendly? Add a tablespoon of crystal sugar to balance the spiciness
And
We call it seeni sambol with the swapped quantity of maldives fish with onions.

* we use this dish on our kidu rice and curry with some lime pickle.

Spicy Pancake wraps

“Pancakes” doea the name sound familiar?
Alright, are you Wondering whats so special about a pancake recipe?
Ofcourse everyone knows how to make pancakes. Should you ever read a recipe? According to myself pancake recipes are passed on from family members. Each one has a different pancake recipe and at the end of the day it all tastes good.
The flavours, fillings and taste varries according to each of our own preference and requirements. In srilanka we have it in a few ways and which is known to my family are sweet and savoury pancakes. The difference of the sweet and savoury pancakes are in the filling. So today am gonna give you a quick recipe on how to make a basic pancake and fill it in srilankan style.

pancake
Ingredients
2 cups wheat flour
2 eggs
A pinch of salt
Coconut milk as required

Method
Mix all the ingredients and beat.
Pour ovwr a nonstick griddle and cook on one side.

Vegetable filling
Ingredients
2 potatoes
2 carrots
A spring onion leaf
1 big onion (chopped)
2 green chillies (chopped)
Pinch of turmeric
1/2 teaspoon chillie powder
1/2 teaspoon chillie flakes
1/2 teaspoon crushed pepper
A few curry leaves
1/8 teaspoon mustard seed
1 teaspoon coconut milk
Salt to taste
1 tablespoon olive oil

method
Peel and dice potatoes and carrots.
Temper onion, curry leaves and add mustard seeds.
Add the vegetables and spices.
Pour some water and cook till the vegetables are tender.
Pour coconut milk and continue cooking.
Once the mixture starts to leave the sides of the pan add oil and stir fry.
Place a tablespoon of mixture in the centre of a pancake and wrap like a roll.
Serve hot.

Ideal for school or office lunch boxes.
The best way to teach your children how to eat vegetables.

Low carb lunch

People have become more health conscious as a result restaurants and cafes have introduced a line up of healthy meals which are low in carb or made out of an alternative ingredient to make it healthy.

A few alternative ingredients I use-

Brown rice
Whole wheat pasta
Red rice flour
Kurakkan flour

Ideas –
Make buriyani out of brown basmathi rice.
Add a few whole wheat pastas for your salad.
Make pittu using red raw rice flour.
You can make rotti using kurakkan flour.

Recipe for a low carb salad –
Ingredients
1 cup shredded chicken (boiled)
Half a carrot (thinly julienned)
1 cup Shredded cabbage
A handful of peas
Half a tomato chopped
1 teaspoon fresh olive
1 teaspoon olive oil
Salt to taste
Pepper as required
*Use low fat low salt feta cheese and avoid the salt
*lettuce leaf to serve

method

Mix all ingredients except feta cheese together gently coating with olive oil.
Spread over a large lettuce leaf.
Sprinkle the feta on top and enjoy.

Ideas to make it with 25%carb

1) Add a few croutons.
2) Wrap it on a thin whoke wheat rotti.
3) sandwich it between two slices of multigrain bread.
4) serve with 1/2 a cup of brown rice.

That’s a post by someone i dont know anything about but I posted it because believe that we both have the same thing in common. ideas don’t come in one place you have to move around, look round and listen to stuff I don’t mean eavesdropping but like watching the tv or radio reading a newspaper, doing some work in the kitchen or elsewhere, while talking to someone or even while you have a shower those are times when ideas flow in to our mind.
