Mafaza’s Rose Sponge

Recipe

Ingredients

4 eggs

5 tbsp sugar

1/3 cup whole wheat flour

Method

Seperate the eggs and whip the egg whites till stiff peaks form with the sugar.

Beat the egg yolk and the rose water.

Fold in the egg whites into the egg yolk in batches until incorporated evenly.

Gently fold in the flour until distributed evenly.

Bake in a pre heated oven at 140 degrees celcius for 30 to 35 minutes or until a toothpick inserted comes out clean.

Cool completely and sandwich with custard or jam.

 

Tips

To make rose water boil a tbsp of water with a small edible rose and drain it. This makes a good aroma for the cake.

 

Mafazas Chocolate Marzipan

The first time I did marzipan was following recipe from a 101 cakes book. It asked me to use 1/2 an egg and the recipe turned out to be a success but sadly I was left with half an egg which then turned into a cookie. I didn’t think using half an egg was ideal and I didn’t want to use 1 egg and make a large batch either. So i decided to create one.

This recipe is ideal to makemarzipan roses and shapes for kida party tables. It great for moulding. I have not tried it on large cakes but it should do fine in small cupcakes to cover the top.

Chocolate  Marzipan 

Ingredients

1 cup almond powder

1 cup icing sugar

1/2 cup melted chocolate or candy melts

1 tbsp water

1. Mix the ingredients together  and make desired shaped

2. Keeps well in a jar for 4 days

3. Refrigerate for upto 10 days

After a good sushi meal I was craving for my sisters brownies. She does make good brownies and I love them, it’s more like a cake and less chewy. I dint ask her for the recipe but tried to make my own remembering the ingredients she used.
These becamea bit chewy yet so delicious.

Kale

I had to Google the health benefits of kale.

I understood it’s a very low calories vegetable and is packed with loads of health benefits.

Well kale does have omega 3 and that’s good for the health.

It’s now a trend to deep fry or air fry the green leafy vegetables and serve it instead of chips or french fries with something well I’ve seen some photos where posh cafes serve the healthy foos. Am not sure how far you can do it crispy on a oven or air fryer but i am very sure if you deep fry it, the kale gets crispy and crunchy.
I know its not very healthybut trust me i wish i had an airfryer to try it but then am not in a mood to invest on it for a weekly frying session. And yes space is a bit of an issue in my kitchen.

Well i tried the kale chips by just washing them and patting them dry.
You need to dry them out thoroughly or else you better not fry them in oil. Everytime i put my kale in the oil there was splatter and splash of hot oil. i had to run and hide myself to prevent any burns.

Yes please be careful before frying leaves always dry it very well.
After frying i seasoned them with salt.

You can store it in a small box in the fridge and use it up on a salad the next day.

kale and Calamari Salad

Ingredients

1 4×4″ calamari cleaned and washed whole piece

5 leaves of kale washed and pat dry

1 small onion finely chopped

Salt and pepper to taste

A drop of lime

1 tsp olive oil

Directions

1. Deep fry kale and set aside

2. Season the calamari with some salt and pepper

3. Pan fry the calamari for a minute on each side

4. Mix onion with lime and season with salt and pepper

5. Chop the calamari into tiny strips

6. In a bowl place the kale, top it with calamari strips and sprinkle the onions on top.

I ate it as it is. You can even serve it with a bowl of rice.

Eggless Cake

Ingredients
1/2 cup whole meal flour
1/2 cup sugar
1/3 cup sunflower oil
1/3 cup water
2 pinches baking soda
1/2 tsp baking powder
1/2 tsp vanilla essence
Method
1. Add the flour, sugar, baking powder, baking soda in a deep bowl and mix
2. Make 3 wells in the dry mixture
3. Pour the vanilla, oil and water into the 3 wells
4. Mix the entire ingredients using a fork
5. Divide batter into 7 baking cups line with baking parchment or cases
6. Bake for 30 minutes at 180 degrees in a pre heated oven.
Cool completely before serving

You can add bit of flavour by topping the cake batter with some orange zest or a spoon of dulche de leche or a few tablespoons of cocoa so that you can have a chocolate flavour.
I added a few chocolate chips too to make it a variety.
